Yeah, the Stanfurd bunny is ubiquitous in computer graphics these days. Kind of like the teapot used to be. I echo the anti-PowerPoint sentiment in this thread--the "layout" tools in PowerPoint are so awful that I die a little inside whenever I think about the fact that so many people actually use it to generate posters. Lineform as mentioned above is actually a pretty good Illustrator-lite. I agree with Maarten in that the learning curve is probably a shit-ton more shallow than Illustrator. You could probably whip up some more science bunnies pretty easily.
Pages is dead easy for this type of thing, especially if you use one of the templates. This poster was created using OpenOffice's Impress. I use Photoshop, which is very explicitly not the right tool for the job, but I know how to use it well. If I could afford the time to learn it, I'd use Illustrator.
